Main Ingredients

  • 1/2 cup quinoa
  • 1 cup water
  • 1/2 cup chopped vegetables e.g. cherry tomatoes, cucumber, bell pepper
  • 2 tbsp hummus or Greek yogurt
  • salt and pepper to taste

Instructions
 

  • Combine quinoa and water in a microwave-safe bowl and cover loosely.
  • Microwave on high for 8–10 minutes, checking halfway through.
  • Fluff the quinoa with a fork once cooked.
  • Add chopped veggies and hummus or Greek yogurt.
  • Season with salt and pepper to taste. Serve warm or chilled.

Notes

You can swap the veggies or use leftover roasted ones. Add spices or lemon juice for extra flavor.
