A quick microwave-cooked quinoa bowl mixed with fresh veggies and hummus or Greek yogurt.

hummus or Greek yogurt

Instructions
Combine quinoa and water in a microwave-safe bowl and cover loosely.
Microwave on high for 8–10 minutes, checking halfway through.
Fluff the quinoa with a fork once cooked.
Add chopped veggies and hummus or Greek yogurt.
Season with salt and pepper to taste. Serve warm or chilled.
Notes
You can swap the veggies or use leftover roasted ones. Add spices or lemon juice for extra flavor.
