- Combine quinoa and water in a microwave-safe bowl and cover loosely.
- Microwave on high for 8–10 minutes, checking halfway through.
- Fluff the quinoa with a fork once cooked.
- Add chopped veggies and hummus or Greek yogurt.
- Season with salt and pepper to taste. Serve warm or chilled.
Notes
You can swap the veggies or use leftover roasted ones. Add spices or lemon juice for extra flavor.
