- Pour the low-sodium chicken broth into the slow cooker.
- In a small bowl, combine salt, onion powder, dried thyme, paprika, black pepper, and garlic powder.
- Rub the olive oil over the chicken breasts, then rub on the seasoning mixture evenly on both sides.
- Place the seasoned chicken breasts in the slow cooker.
- Cover and cook on **Low** for 4 to 6 hours, or on **High** for 3 to 4 hours, until internal temperature reaches 165 °F (≈ 74 °C).
- Remove chicken, let rest for 5 minutes, then slice or shred and serve with juices or sauce.
