Casserole Base

  • 3 cups shredded cooked chicken Rotisserie or pre-cooked chicken works best
  • 8 oz cream cheese Softened to room temperature
  • 1 cup sour cream
  • 1 cup cottage cheese Ricotta cheese can be substituted
  • 1 cup mayonnaise
  • 1 can cream of chicken soup About 10.5 oz can
  • 1 tsp garlic powder
  • 1 tsp onion powder

Topping

  • 1 cup shredded cheddar cheese Or mozzarella for a milder flavor
  • 1 cup crushed buttery crackers Such as Ritz or club crackers
  • 4 tbsp butter Melted

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a large bowl, mix softened cream cheese, sour cream, cottage cheese, mayonnaise, and cream of chicken soup until smooth.
  • Stir in shredded chicken, garlic powder, and onion powder until well combined.
  • Spread the mixture evenly into the greased baking dish.
  • Sprinkle shredded cheddar cheese evenly over the casserole.
  • In a separate bowl, mix crushed crackers with melted butter, then spread over the top of the casserole.
  • Bake uncovered for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.
  • Let sit for 5 minutes before serving. Enjoy!

Notes

For a lighter version, substitute Greek yogurt for sour cream and use reduced-fat cheese. Try adding cooked bacon or sautéed mushrooms for extra flavor!
