Ingredients
  

Casserole Base
  • 3 cups shredded cooked chicken Rotisserie or pre-cooked chicken works best
  • 8 oz cream cheese Softened to room temperature
  • 1 cup sour cream
  • 1 cup cottage cheese Ricotta cheese can be substituted
  • 1 cup mayonnaise
  • 1 can cream of chicken soup About 10.5 oz can
  • 1 tsp garlic powder
  • 1 tsp onion powder
Topping
  • 1 cup shredded cheddar cheese Or mozzarella for a milder flavor
  • 1 cup crushed buttery crackers Such as Ritz or club crackers
  • 4 tbsp butter Melted

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. In a large bowl, mix softened cream cheese, sour cream, cottage cheese, mayonnaise, and cream of chicken soup until smooth.
  3. Stir in shredded chicken, garlic powder, and onion powder until well combined.
  4. Spread the mixture evenly into the greased baking dish.
  5. Sprinkle shredded cheddar cheese evenly over the casserole.
  6. In a separate bowl, mix crushed crackers with melted butter, then spread over the top of the casserole.
  7. Bake uncovered for 30-35 minutes, or until the casserole is bubbly and the topping is golden brown.
  8. Let sit for 5 minutes before serving. Enjoy!

Notes

For a lighter version, substitute Greek yogurt for sour cream and use reduced-fat cheese. Try adding cooked bacon or sautéed mushrooms for extra flavor!
