For the Cake Base:
- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 4 large eggs
- 1 cup unsalted butter softened
- 1 cup milk
- 1 tsp pure vanilla extract
- 2 tsp baking powder
- Pinch of salt
For the Frosting:
- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 1 tsp vanilla extract
For the Toppings:
- 2 cups fresh mixed berries strawberries, raspberries, blueberries
- Mint leaves for garnish optional
Prepare the Cake Base:
Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
In a bowl, sift together flour, baking powder, and salt. Set aside.
In a separate large bowl, cream butter and granulated sugar until light and fluffy.
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Gradually alternate adding the dry ingredients and milk, starting and ending with the dry mixture. Mix until just combined.

Make the Whipped Cream Frosting:
Chill a mixing bowl and beaters for 15 minutes in the refrigerator.
Combine heavy whipping cream, powdered sugar, and vanilla extract in the chilled bowl. Beat on high speed until stiff peaks form.
Assemble the Cake:
Place one cake layer on a serving plate. Spread a thick layer of whipped cream over it.
Top with a layer of fresh mixed berries.
Add the second cake layer and repeat the process. Frost the entire cake with the remaining whipped cream.
