Prepare the Cake Base:
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
- In a bowl, sift together flour, baking powder, and salt. Set aside.
- In a separate large bowl, cream butter and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
- Gradually alternate adding the dry ingredients and milk, starting and ending with the dry mixture. Mix until just combined.

Make the Whipped Cream Frosting:
- Chill a mixing bowl and beaters for 15 minutes in the refrigerator.
- Combine heavy whipping cream, powdered sugar, and vanilla extract in the chilled bowl. Beat on high speed until stiff peaks form.
Assemble the Cake:
- Place one cake layer on a serving plate. Spread a thick layer of whipped cream over it.
- Top with a layer of fresh mixed berries.
- Add the second cake layer and repeat the process. Frost the entire cake with the remaining whipped cream.
Garnish and Serve:
- Decorate the top with additional fresh berries and mint leaves.
- Chill for at least 1 hour before serving for best results.
