Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp balsamic vinegar
Bruschetta Topping
  • 2 cups cherry or Roma tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic glaze
  • 1/2 cup mozzarella cheese, shredded (optional)

Method
 

  1. In a bowl, mix olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
  2. Preheat grill to medium-high heat (375-400°F) or oven to 400°F.
  3. Grill the chicken for 5-7 minutes per side or bake for 20-25 minutes until the internal temperature reaches 165°F.
  4. In a separate bowl, mix diced tomatoes, red onion, garlic, basil, olive oil, and balsamic glaze. Let it sit for 10-15 minutes to enhance the flavors.
  5. Once the chicken is cooked, top each piece with the bruschetta mixture. If using mozzarella, sprinkle on top and allow it to melt.

Notes

For extra flavor, add a drizzle of balsamic reduction or serve with a side of garlic butter asparagus or zucchini noodles.
