Ingrédients
  

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp balsamic vinegar

Bruschetta Topping

  • 2 cups cherry or Roma tomatoes, diced
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic glaze
  • 1/2 cup mozzarella cheese, shredded (optional)

Instructions
 

  • In a bowl, mix olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
  • Preheat grill to medium-high heat (375-400°F) or oven to 400°F.
  • Grill the chicken for 5-7 minutes per side or bake for 20-25 minutes until the internal temperature reaches 165°F.
  • In a separate bowl, mix diced tomatoes, red onion, garlic, basil, olive oil, and balsamic glaze. Let it sit for 10-15 minutes to enhance the flavors.
  • Once the chicken is cooked, top each piece with the bruschetta mixture. If using mozzarella, sprinkle on top and allow it to melt.

Notes

For extra flavor, add a drizzle of balsamic reduction or serve with a side of garlic butter asparagus or zucchini noodles.
