- In a bowl, mix olive oil, balsamic vinegar, Italian seasoning, salt, and pepper. Coat the chicken and marinate for at least 30 minutes.
- Preheat grill to medium-high heat (375-400°F) or oven to 400°F.
- Grill the chicken for 5-7 minutes per side or bake for 20-25 minutes until the internal temperature reaches 165°F.
- In a separate bowl, mix diced tomatoes, red onion, garlic, basil, olive oil, and balsamic glaze. Let it sit for 10-15 minutes to enhance the flavors.
- Once the chicken is cooked, top each piece with the bruschetta mixture. If using mozzarella, sprinkle on top and allow it to melt.
Notes
For extra flavor, add a drizzle of balsamic reduction or serve with a side of garlic butter asparagus or zucchini noodles.
