Chantilly Cake: A Decadent Treat You Can’t Resist

A light and fluffy Chantilly cake layered with whipped cream and fresh berries, perfect for any occasion. Sweet, fruity, and irresistibly creamy!

  • For the Cake Base:
    • 2 ½ cups all-purpose flour
    • 1 ½ cups granulated sugar
    • 4 large eggs
    • 1 cup unsalted butter, softened
    • 1 cup milk
    • 1 tsp pure vanilla extract
    • 2 tsp baking powder
    • Pinch of salt
  • For the Frosting:
    • 2 cups heavy whipping cream
    • ½ cup powdered sugar
    • 1 tsp vanilla extract
  • For the Toppings:
    • 2 cups fresh mixed berries (strawberries, raspberries, blueberries)
    • Mint leaves for garnish (optional)

Instructions

 

  1. Prepare the Cake Base:
    • Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
    • In a bowl, sift together flour, baking powder, and salt. Set aside.
    • In a separate large bowl, cream butter and granulated sugar until light and fluffy.
    • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
    • Gradually alternate adding the dry ingredients and milk, starting and ending with the dry mixture. Mix until just combined.
    • Pour the batter evenly into the prepared pans and bake for 25-30 minutes or until a toothpick inserted comes out clean. Allow to cool completely.
  2. Make the Whipped Cream Frosting:
    • Chill a mixing bowl and beaters for 15 minutes in the refrigerator.
    • Combine heavy whipping cream, powdered sugar, and vanilla extract in the chilled bowl. Beat on high speed until stiff peaks form.
  3. Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a thick layer of whipped cream over it.
    • Top with a layer of fresh mixed berries.
    • Add the second cake layer and repeat the process. Frost the entire cake with the remaining whipped cream.
  4. Garnish and Serve:
    • Decorate the top with additional fresh berries and mint leaves.
    • Chill for at least 1 hour before serving for best results.
